Gluten is a protein found in wheat, barley, and rye. It gradually damages the intestines of people with celiac disease, resulting in a laundry list of related health problems. But even people who don't have celiac disease may benefit from diets free of (or low in) gluten. Experts now believe that celiac disease is simply the far end of a broad spectrum of gluten intolerance. As much as 10 percent of the U.S. population may have a related and poorly understood condition known as non-celiac gluten intolerance (NCGI), or gluten sensitivity. CNN reports: _"Gluten intolerance of any kind -- including celiac disease -- is often underdiagnosed (or misdiagnosed) because it manifests itself in many and murky ways that can baffle doctors. People with gluten sensitivity sometimes experience these far-reaching symptoms as well"._ Celiac disease (CD) involves intolerance to gluten and, consequently, suffering chronic illness in the small intestine. It is a genetic disorder, the immunological indications of which can be traced in the human body prior to the everyday activities of future sufferers being affected. For example, persons with genetic antecedents for CD develop antibodies against the gene tTG (the enzyme known as tissue transglutaminase), even before the illness becomes active, due to a cell reaction against gluten. The clinical symptoms of CD appear only in the final stages of the disease... Gluten should be avoided by people with celiac disease. But what about the rest of us?
